Taco Tuesday
We don’t always stick to a dinner meal routine because it depends on what’s in season. But taco Tuesday has always been a consistent meal for us. I set up a taco bar with all the ingredients. I want my children to help themselves which also fosters independence. It helps that we have two dogs to clean up some of the inevitable things that drop on the floor:)
Here is my go to Taco seasoning recipe. Let me know in the comments if you try it!
🌮 Taco seasoning Ingredients:
4 tablespoons of chili powder
1 teaspoon red pepper flakes
¼ teaspoon cayenne pepper
1 teaspoon oregano
2 teaspoons smoked paprika
2 tablespoons ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
🌮 Taco Meat Recipe
1 In a large, deep-sided cast iron skillet, cook and crumble the ground beef, sprinkling with the spices as it begins to brown. I like to add some of the spice mixture to the center of the pan to sizzle and then coat the rest onto the meat
2 Continue cooking for 1-2 minutes, just to warm everything.
3 Taste and adjust spices as needed.
4 Serve immediately or let cool and portion into freezer-safe containers.
Cilantro Lime Rice:
Rinse the dry rice until the water runs clear.
Bring 2 cups of rice and four cups of water to a boil. Reduce to a simmer, cover, and cook for 20 minutes or until the water is fully absorbed. Can also cook in a pressure cooker.
