Sourdough Pancakes
Sourdough pancakes
2 large eggs (I use Angel acres through nourish cooperative)
1 cup milk (I use almond)
3 tbsp butter (raw unsalted from nourish cooperative)
1 tsp baking soda
2 tsp aluminum free baking powder
1/2 tsp Jacobsen sea salt
1.5 cups Kandarian or jovial einkorn flour
1 cup sourdough starter (check out @lauralivesthegoodlife on how to make a starter)
2 tbsp Coombs maple sugar
*optional 1 cup of blueberries
Mix wet ingredients first. Then mix dry ingredients. Combine in a mixer. Then add blueberries and mix with a silicone spatula. Turn cast iron griddle (love the one from field company) on medium/low heat. Can use coconut oil or raw butter to coat but only a thin amount (not needed if cast iron is seasoned). Turn heat down and take an ice cream scooper to make evenly made pancakes. When it bubbles on top, then use fish spatula (love the one from field company) to flip over.
Toppings Bar:
Philosophers stone ground almond butter (drizzle on top)
Shredded coconut
Hemp seeds
Berry jam (I cook down my older berries in a pot, can add a splash of a mandarin but not necessary).
