Kale and Quinoa Salad Recipe
1 bunch of green kale cleaned and chopped finely
2 cups of cooked quinoa
2 persian cucumbers small diced
1 small granny smith apple peeled and small diced
1 bunch of curly parsley picked and chopped finely
1 shallot finely minced
1 heirloom tomato small diced
2 tbsp of mint finely sliced
2 garlic cloves finely minced
1 tbsp of dijon mustard
1-2 lemons worth of juice
½ cup of olive oil
Salt and pepper to taste
Combine all the ingredients in a mixing bowl except the lemon juice, olive oil, shallot, garlic, and dijon mustard.
In a separate bowl, whisk together the lemon juice, olive oil, shallot, garlic, and mustard to make a vinaigrette.
When ready to serve, pour the vinaigrette over your pre mixed greens and quinoa. Season with salt and pepper, serve immediately.
