Curried Tuna Salad Recipe
1 8oz jar Tuna Filet preferably packed in olive oil
½ cup of homemade mayonnaise, vegan mayonnaise or coconut yogurt - but may need to add more salt.
1 tbsp of dill pickles chopped finely
1 tbsp of shallot finely minced
1 tbsp of lemon juice
2 tsp of curry powder
4 tsp of olive oil
1 tsp of parsley
1 tsp of dill
1 tbsp of raisins
Heat a pan on medium low heat, add your olive oil followed by the curry powder. Bloom the curry powder until fragrant, 1-2 minutes. Set aside to cool.
Drain your tuna filet and gently break it up in a mixing bowl.
Add to your tuna the mayonnaise, pickles, shallot, lemon juice, parsley, dill, raisins, and bloomed curry oil. Mix everything thoroughly.
Season with salt and pepper to taste. Serve immediately.
