How To Make Pumpkin Teff Waffles

A lot of people are asking about these since I posted them in my stories this morning. These waffles are a tasty gluten-free option for breakfast and leftovers make a great addition to afternoon snack plates! The great thing about teff is that it has 7g of protein per serving, 20% of your daily value of iron (for an adult), tons of calcium, magnesium, zinc and vitamin C, AND 10% of your daily value of vitamin B6. Combine all of the following ingredients and then make in your waffle maker:
1 egg
1 cup teff flour (or other GF flour)
1/2 cup plant based milk
1/2 cup pumpkin purée (lots of iron and vitamin A)
1 tbsp coconut oil
1/2 tbsp baking powder
2 tsp pumpkin spice
1 tbsp organic maple syrup
2-3 tsp of blackstrap molasses unsulphured
Drizzle of Just Date Syrup (optional)
