My Favorite Kale Salad

Here's my "the kids are all back in school" picture and I get to enjoy this salad! πŸ₯— πŸ₯—πŸ₯—

This is my favorite salad as it really holds up because kale is a type of green that doesn't wilt with dressing on it. This is also the salad that I take with me when traveling. Somehow whenever I am eating it, my kids want it too. One way to get your kids to eat salad is by serving yourself the salad first and waiting for your child to ask for some. Another way is to make it fun by doing a β€œcheers” with some salad on your fork. One other way is to see how many items you can get on your fork and allow them to have an adult size fork which they think is fun.

Salad ingredients:

1 head of cleaned chopped kale
1 head of cauliflower
2 cups of @andean.dream quinoa orzo
6 mini peppers
1 bunch parsley
1/2 cup raisins
1/2 cup toasted @kandarianorganicfarms pepitas

For the dressing:

1 cup olive oil
1/2 cup lemon juice
2 cloves garlic
1 tbsp of dijon mustard
1 tsp honey
salt and pepper to taste

Prepare
Floret the cauliflower & slice mini peppers in thin strips, place cauliflower & peppers in bowl & coat with extra virgin olive oil. Season with salt/pepper. Place veggies onto baking sheet with @ifyoucare_usa unbleached parchment paper & roast for 20 min at 350 degrees. Cool roasted veggies down & combine with kale, pepitas, parsley & raisins. Prepare the dressing while the veggies are cooking or cooling. Add 1 cup of dressing to the salad, and toss together. Add more to taste if needed.
