Kid-Approved Veggie Oatmeal Recipe

I am often asked what brand of oats I use to make morning oatmeal for the kids and myself. I typically buy @OneDegreeOrganics sprouted, gluten-free steel cut oats (if you use steel cut oats - it cuts the cooking time down if you soak them the night before)

My go-to recipe is:

🥣 Boil 2 cups of water with a @SimplyOrganicFoods Ceylon cinnamon stick and a sprinkle of pink salt.

🥣 Once boiling, add 1 1/4 cups of steel cut oats and turn to a simmer. Cover while leaving a little room for air to escape.

Optional: take 1 vanilla bean. Slice open and scrape with the back of the knife and put directly into the oatmeal while it’s cooking.

🥣 Finely grate one carrot and one zucchini, add that to the pot and stir it. Cook for about 15-20 min.

🥣 Add in 2-3 teaspoons of blackstrap molasses (try 1/2 teaspoon first if you aren’t used to it). Fun fact: 3 teaspoons of blackstrap molasses has 20% iron (and that’s for an adult serving!).

To serve- I serve 1/4 cup to each child and 1/2 cup for myself and can add a drizzle of @Coombsmaple syrup or @justdatesyrup. I like to make a toppings bar with chia seeds, @FoodsAlive hemp seeds, shredded coconut, and bee pollen.

I also froth up some homemade nut milk in my Breville milk frother, add some to the bowls and top with some carob powder to make “chocolate” oatmeal or top with frozen @WoodstockFoods wild blueberries to cool it off, which the kids love because the milk turns purple. 💜
