Iron Packed Brownie Bites 💪
@latelyilove is a great friend of mine and the paleo version of me but she is learning to eat less meat 😉She made these for me to help boost my iron levels as I am nearing the end of my pregnancy and I will lose a lot of blood during birth because I will be having a c-section. Here is her recipe:
Cacao Collagen Brownie Bites
❤️1/2 cup almond flour
❤️1/2 cup tigernut flour
❤️1 tbsp cacao powder
❤️1 tbsp cacao nibs (or more if you like a little more crunch)
❤️3 tbsp collagen powder (can skip if vegan or get plant based one)
❤️5-10 dates depending on how sweet you like these (also great for shortening labor time)
❤️1/2 tsp sea salt
❤️5 tbsp melted cacao butter
Blend all in food processor for a minute or so and then form into golf ball size bites. Sprinkle with Maldon sea salt flakes.
Refrigerate to set or freeze. And yes my oldest tried to sneak one- I let him have a small bite (as cacao does have caffeine and I didn’t want him jumping off the walls 🐒)
