I always start with the introduction of finely grated raw carrots. This is the start of getting them used to the texture of salad. Since some kids are turned off by the color green, orange is a more approachable color. A tip I picked up from a French cooking class is to drizzle a little extra virgin olive oil & splash of 🍯. You can slowly transition adding green items like chopped chives or green peas to the carrot slaw. 🥕🥕🥕

For older kids who are more hesitant, try adding golden raisins (make sure they are Sulphur Dioxide free & no added sugars). And again, modeling behavior is the best teaching tool, so parents eat your greens! Other items in lunchbox: coconut hemp buckwheat pancakes, mashed avocado/lime/pink salt w hemp hearts, cucumbers, blueberries & a prune.
