Coconut Hemp Pulp Buckwheat Pancakes

These have been a new favorite in our home. Coconut Hemp Pulp Buckwheat Pancakes. They are gluten free, dairy free, nut free and refined sugar-free. They are protein and iron packed. 🌱🌱

I get a lot of questions about how much protein a toddler should get. For a toddler 1-3 years, it is recommended to have about 0.55g of protein per pound of weight. So if your toddler weights 30lbs, they should be getting ~16.5g per day. Toddlers should also be getting about 7mg of iron daily. 
3tbsp of hemp hearts= 10g protein, 3.6mg iron
3tbsp shredded coconut= 1g protein
1 egg= 7g protein, 0.6mg iron
1tbsp blackstrap molasses= 3.5mg iron
1 cup of buckwheat flour= 15g protein, 4.9mg iron

Coconut Hemp Pulp Buckwheat Pancakes: 
2 pasture raised eggs
1 large ripe banana
3/4 cup coconut hemp pulp (leftover from making milk)
3/4 cup coconut hemp milk
3/4 cup buckwheat flour
1 tsp aluminum free baking powder
1 tsp @simplyorganicfoods Ceylon cinnamon
1 tsp non-alcoholic vanilla
2 tsp blackstrap molasses
1 tbsp maple syrup
Pinch of Jacobsen salt

Mix banana and egg first, then add pulp and milk, then add rest of ingredients in blender or mixer. I use an @oxo scooper to make silver dollar pancakes for the kids on my Field Company cast iron pan
