Green Monster Pancakes

🥞 WEEKLY BREAKFAST MENU 🥞 .

I find that having a weekly menu helps with predictability and teaches the kids the days of the week as well. It also makes my life easier. The veggies and fruits change based on what’s in season but it generally stays pretty consistent. All the recipes can be found on my blog (link in bio). 📅 Here is my weekly menu: 📅 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Monday - Veggie loaded oatmeal 🥣
Tuesday - Coconut hemp/nut pulp buckwheat pancakes 🥞
Wednesday - Gluten Free Dairy Free Dutch Pancakes made with teff flour 🥞
Thursday - Chia Seed Pudding with my homemade granola and various toppings including homemade blueberry sauce or nut butters like @solsticecanyon OR if I don't have pudding we will have @cookwithdanny almond yogurt with similar toppings. 🥣
Friday - Egg dish with @cocobakesbread. Egg dishes vary--Veggie Fritatta, Egg Wrap - and only based on availability of the @apricotlanefarms eggs 🍳
Saturday - Green Monster pancakes (pictured) 🥞 with @kandarianorganicfarms oat flour
Sunday - Veggie loaded oatmeal with a toppings bar. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Smoothies are often accompanied with all of these breakfasts because my kids are always so hungry in the morning.

🌱Green Monster Pancakes 🌱
1 large egg or 2 small
1 large ripe banana
Handful of spinach or baby kale
1/4-1/2 cup oat flour
2-3 tsp blackstrap molasses ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix all ingredients in blender and use @oxo ice cream scooper to make silver dollar pancakes.
