Story Time Snack: Mango Chia Pudding

Do you ever struggle with getting your kids to try new foods? Try to pair the new food with a book. This applies to anything you might be struggling with...The visual representation helps to solidify the concept for a child.

Today’s story time snack is a mango chia seed pudding inspired by one of our favorite books: Too Many Mangos a story about sharing by Tammy Paikai.
The book teaches a child the abstract concept of paying it forward. It also highlights different cultures and new and exotic foods.

Here is the recipe for the mango chia seed pudding:
1 ripe mango skinned cored and diced
1 can unsweetened coconut milk
8 pitted dates
1/4 cup of chia seed
1 cup mango puree
Directions:
Blend the coco milk, dates, and mango puree. Strain through a mesh strainer. Stir in chia seeds and mango. Rest overnight, stir and eat!
