Sprouted Spelt Flour Lemon Olive Oil Cake with Grapefruit Recipe

It’s hard to find good quality flour, certified free from glyphosate AND that is sprouted! I love spelt flour because it’s an ancient grain loaded with protein, so definitely more nutritious. I COMPLETELY trust @onedegreeorganics for their sprouted flours and gluten free oats, and use them ALL the time!

Sprouted Spelt Flour Lemon Olive Oil Cake with Grapefruit Recipe


  • 1 cup extra virgin olive oil, plus more for baking pan

  • 2 cups sprouted ONE DEGREE spelt flour, plus more for baking pan

  • 1 tsp kosher salt

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • 1.5 cups maple sugar

  • 3 large eggs

  • 1 freshly zested lemon and its juice 

  • 1 cup of powdered sugar

  • 1 grapefruit segmented and juice reserved

  • 1.25 cups of almond milk


  1. Preheat the oven to 375 degrees F. Grease a 8 inch round cake pan using olive oil and then gently dust on spelt flour to create a nonstick surface. 

  2. In the bowl of a mixer set on high, beat the sugar, eggs, and lemon zest until thick and fluffy, about 5 minutes. Turn the mixer to low and add in your olive oil. Mix until oil is incorporated. After the oil gets dispersed into the batter, add the milk and lemon juice and mix until combined. Add your spelt flour and mix well until the batter is homogenous. 

  3. Once the batter is done, pour the mixture into your prepared baking pan and bake until 40-45 minutes. You want to bake this until a cake tester can come out cleanly from the center of the cake. If the cake is browning too fast on top after the 30 minute mark you may cover the cake with foil to prevent further browning of the cake while cooking it thoroughly. 

  4. Once the cake is done remove it from the oven and let it rest for at least 20 minutes in the baking pan. Once cool enough to handle you may use a spatula to gently lift the cake out of the pan. Transfer the cake to a raised wire rack to cool the cake completely, approximately 1 hour. 

  5. Once the cake has cooled, slice and serve with the grapefruit frosting followed by the grapefruit segments.


Grapefruit Frosting Recipe


  1. Take the reserved juice from the 1 grapefruit you segmented and mix in 1 cup of powdered sugar until homogenous. If the frosting is too loose add 1 tbsp of powdered sugar at a time to the frosting until it thickens to your desired consistency. 

**You could also add sprouted almond butter & fresh fruit for a yummy breakfast! Or could make it for a delicious 1st birthday smash cake!!
