Pineapple Butternut Squash Muffins

I have been making A LOT of muffins now that I have a cast iron muffin pan!! We've taken the kids to Hawaii and since then they have been requesting pineapple. It is such a fun addition to baked goods because the pineapple caramelizes and adds a nice crunch. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here is the Pineapple Butternut Squash recipe: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups of sprouted oat flour @onedegreeorganics (process sprouted steel cut oats)
2 tsp baking powder
1 tsp of aluminum free baking soda
Pinch of Jacobsen Salt Co salt
2 pasture raised organic eggs
1 tbs vanilla
1/2 cup of @coombsmaple maple syrup
1 cup of @newearthsuperfoodscoconut yogurt
1/2 cup butternut squash purée
1 cup sliced pineapple
3 tbs shredded coconut ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Combine everything except pineapple into a mixer and then fold in the pineapple and bake at 350 for 20 mins. Makes 12 muffins.
