Leftovers for Lunch!

Like all moms, I struggle with lunch ideas and find a lot of inspiration on @instagram. The key I’ve found is getting to repurpose food. People always ask "how do you make all these lunches?” It's repurposed dinner! Lunch shouldn't be so complicated. I also don't stress if my kids don't finish their lunch. 
The important thing is to observe their lunch behaviors. When I get the lunchbox back, I am looking to see what did he eat, what did he not eat and was the lunch box too big, was it too small, did the presentation impact his decision making and what was his mood that day? I find when kids wake up sleepy, they want more carbs. 

On the menu today - cauliflower rice with sautéed tutti fruity snap peas, @seasnax seaweed, strawberries, @7_hotdates with @onceagainnutbutter sunflower butter with some drizzle @redmondrealsalt sea salt. @jovialfoods einkorn crackers and @harrysberries strawberries.
