Butternut Squash Oatmeal Muffins

I love using different winter squashes for breakfast in the winter months and I love these nutrient dense muffins. Here is the recipe:

Pt. 1 - ingredients
2 cups @kandarianorganicfarms oat flour
2 tsp baking soda
2 tsp aluminum free baking powder
1/2 tsp ceylon cinnamon
1 tsp pumpkin spice
1/4 tsp @redmondrealsalt
Whisk all the dry ingredients together ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pt. 2 - ingredients
1/3 @coombsmaple maple syrup
1/2 cup canned coconut milk
1 1/2 cup butternut squash purée
2 duck eggs or 3 chicken eggs (love @apricotlanefarms )
4 tbs coconut oil

Blend everything from part 2 in the @vitamix. Combine with the ingredients from part 1 and bake for 16 mins at 400º in a @lodgecastiron cast iron muffin tin.
