Black Bean Veggie Burger ⬇️⬇️⬇️

These are on rotation right now since they are such an easy food for all three of my kids to eat. I always have some kind of bean cooked each week and I will vary it up. And I would love to know if you guys are making my recipes- if you do, please tag me👩‍🍳 👨‍🍳 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Here's the vegetarian DF GF black bean burger recipe:

  • 1 cup cooked @kandarianorganicfarms black beans

  • 1/4 cup @woodstockfoods organic frozen corn

  • 1 small chopped red bell pepper

  • 1 tbs. of @kentercanyonfarms chopped cilantro

  • 1/2 small red onion diced

  • 1 @apricotlanefarms pasture raised organic egg

  • 1 tsp. cumin

  • 1 tsp. paprika

  • ~ 1 cup @kandarianorganicfarms chickpea flour

  • Salt to taste⠀⠀⠀⠀⠀⠀⠀⠀⠀

Mix all ingredients in a food processor except the flour. Pulse the mixture until well chopped, but NOT pureed. Add flour a quarter cup at a time until the mixture thickens and the batter doesn't run loose. Preheat a 1/4 inch of oil in a pan to 375 degrees to pan fry the fritters. Use an @oxo ice cream scoop and portion out desired fritters. (If the batter breaks apart during the frying add a bit more flour to the batter mixture) The fritters should cook like pancakes, approximately 2-3 minutes a side until golden brown and crispy. Drain off excess oil, cool on a wired rack, and eat right away.
